History 
Vermouth originated in Turin in the late 19th century original as a medicinal tonic but it soon became popular in bars before finding it's way into a number of classic cocktails.
Usage 
A Martini isn't a Martini without Dry Vermouth, Winston Churchill's opinion not withstanding.  It's a key player in that drink but is often a supporting part in other drinks where sweeter or more bitter flavours take centre stage.
